The Aroma Is Intoxicating: Behind The Scenes At Eataly Downtown’s Bakery

Explorer in Chief Josh Katz recently followed Eataly Downtown’s lead baker Roger Flores, whose shift begins at 4 a.m.…  

In the early morning, Flores has the entire kitchen to himself for a few hours before the rest of the team arrives to fill the space with the smell of freshly baked bread. 

When the store opens at 8 a.m., production is in full swing. 

Focaccia comes out of the oven. 

Fresh mozzarella gets stretched. 

Pasta fresca is cut and gracefully hand-assembled. 

The artisanal production processes are as beautiful to watch as their final products are to taste.
